Ever get stuck in a rut with cooking? Same old thing over and over again?

Why don't we have a recipe swap?  
Put up recipes of things that we make, and then we can all get an idea for something different.

How bout it??

Mmmmmmm....sounds nummy.....how about an appetizer?

Sliced baked tomatoes

2 tomatotes
4 saltine crackers, crumbled
2 t margarine/butter/substitute
1 T brown sugar
1/8 t basil
1/8 t pepper
1/8 t pinenuts
dash of white pepper
1/4 c mozzarella cheese, grated

Slice tomatoes, either in halves or in slices. Melt butter in sugar. Add crumbs. Spread over each slice. Sprinkle basil, pepper, grated cheese, and pinenuts. Bake at 350 F for 10 minutes or until cheese melts. 4 servings.

PS: I dunno if a recipe swapping forum would fit, but on the other hand...a loaf of bread, a jug of wine, and thou....seems like a recipe to me...

Here's one for Chili! I tried it the other day and man was it was good! Now, mine was hot, so depending if you like it that way or not, adjust your peppers.

1 lb Hamburger
1 medium onion
1 package of McCormick Orig. Chili Seasoning
2 cans of Fresh diced, Delmonte tomatoes
1-2 cans of dark red kidney beans
1 green pepper (can use different colors if you'd like, I threw in a yellow one too)
1 chili pepper...Now I'm not sure of the name of these, but the pepper was yellow and skinny and long...you can cut the seeds out, that should take some of the kick from it.
46 oz. of V-8 juice (Original)


Brown hamburger with onion, drain. Add in
cut up peppers, tomatoes, chili seasoning, kidney beans and V-8 juice. Bring to boil, and let simmer for a couple hours, or until peppers and beans are tender.

Great chili! You can add V-8 juice if you want soupier chili. This will make a big pot of chili!

lissen i just quit my job to finish school yuh and i am learning. i cooked meatloaf the other day and it was pretty good i'll hafta dig up the recipe but i know it was mainly just heavy on the prayer

Okay, I have to admit...I LOVE this idea! (I absolutely LOVE to cook!) Even if there isn't a designated forum/place to put them...we can all swap via email or icq or whatever. Now that the holidays are coming up especially, I'm pressed to find new things to cook for everyone.  I need ideas!

Oh dear Dovey, I could be here all day....but I'll start off with Lemon Cheesecake, easy to make and great for either dinner parties or general family dinners..  

You will need:

4oz digestive biscuits
2oz butter
1 level teaspoon caster sugar

for the filling:

Half pint of fresh double cream
6ox can of condensed milk (carnation preferably)
3/4 large fresh lemons

For the topping:

Lightly whipped fresh double cream (taken from above)
fresh or crystalisedlemon slices

Preparation time is 15 mins or thereabouts
Cooking time is about 8 minutes @ oven setting 310F, 150C or gas mark II

Instructions:

Crunch digestives ( I put my biscuits in a plastic bag and use a rolling pin, saves on mess..*g*)

Melt butter in a saucepan, add sugar then blend in the biscuit crumbs. Mix well. Turn mixture into a 7" glass dish ( like a pie plate but looks better) and press the mixture down with the back of a spoon, bake in the over for about 8 minutes (this can also be done in a microwave for about 2/3 minutes) then remove dish from oven and leave to cool...do not turn out into other dish as mixture will crumble.

Squeeze the juice form all lemons but remember to remove the pips (LOL)

Mix together cream, condensed milk and finely grated lemon rind (use the peel of about 2 lemons) Slowly beat in the juice of the 3/4 four lemons (the mixture will start to curdle and taste divine...(I'm hungry..LOL) Pour mixture on top of the flan case you took from the oven and put in the fridge for about 1 hour (depending on how cool your fridge is...

Just before serving add a few swirls of double whipped cream and scatter chocolate flakes or equivalent on top....

This is my own variation on cheesecake but goes down so well I get asked to make it all the time and it is so quick to do, costs about £1.50 not sure about dollars....

Tip: Grease the dish before adding the crumb mix as when you serve it, it will come out like a dream..  )

You can keep this in the fridge for about 2/3 days and will still taste wonderful, the topping can also be added few hours before so long as kept in a cool place.

I forgot, this is not for those on a diet as each portion is about 1000 calories...ROFL and it makes about 6/8 depending how generous you are...*g*

I'll follow tomorrow with a great Russian recipe for a mushroom appertif, takes about 10 minutes and is mouthwatering...yummmy...ooops, did say you would get me started, forgive the pun!!

one of my favorites...easy to make and very tasty main course...can be microwaved or oven baked.

"Blissful Breaded Breasts" *teasing

Ingredient List-
_ boneless skinless breasts of chicken
  (or chicken strips)
_ italian bread crumbs
_ chopped fine, spring onions
_ distilled vinegar
_ an egg or two
  (depending on how much chicken)
_ butter or margarine
_ water or milk

this is a non-precise recipe as it really doesn't matter, you can't ruin it...unless your burn it

1- either use chicken strips or cut the      breasts into portion size pieces (small enough that you may want 2 to 3 per serving)

2- beat an egg in a bowl, adding water or milk, your preference for dipping the chicken into

3- then coat in bread crumbs, seasoned anyway you like, I buy Progresso Italian, but each area of the country or world is different

4- place them in a corning microwave or ovenware dish or on a non-stick cookie tray... if not spray it with Pam or coat lightly with crisco to prevent from sticking.

5- melt a stick of butter/margarine in microwave or on stove

6- add to a half cup or more if large amount of servings, of white distilled vinegar

7- add finely chopped spring onions to the  vinegar/margarine combination

6- then spoon over the breaded chicken pieces

8- bake in oven at 350-400 degrees for  about
30 minutes depending on your oven or until  crisp... turning over once, to evenly brown and cook thoroughly.

in the microwave it takes less time..but you have to make sure you dont dry it out too much...this is a simple recipe..as long as the chicken was thawed originally, it shouldnt take long...I just am trying to give you  each step...you can't make a mistake unless you burn it...The smell and taste will be wonderful..

Then have a baked potato or asparagus or a salad  to accompany it..any vegetable of choice.

My specialty:  Cereal with Milk (spoon and bowl necessary for most)  

Step 1: Open box of cereal
Step 2: Pour cereal into bowl
Step 3: Open milk
Step 4: Pour milk into bowl
Step 5: Put away milk and cereal
Step 6: Place spoon in bowl, raise contents to mouth, and enjoy

Cherry Cheesecake

2 packages (one 8oz, one 3oz) cream cheese, softened

1 cup confectioners' sugar

1 carton (8oz) cool whip or whipped topping
thawed

1 shortbread or graham cracker crust (8-9 inches)

1 can (21oz) cherry pie filling


In a mixing bowl, beat the cream cheese and sugar until smooth. Fold in whipped topping; spoon into crust. Top with pie filling. Refrigerate until serving.
Yield: 6-8 servings

Caster sugar is much coarser than granulated (the kind you put in your tea or coffee) I'll have a hunt round and see if I can find what you would use instead....The digestive buscuits are a wholemeal or maybe you call them sweetmeal, I'll look for those too and let you know...

Caster sugar is apparently what you use as regular sugar...we have 4 main types here:

Icing sugar (really fine)
Granulated (used for drinks)
Caster sugar (used for cooking)
Brown sugar (cooking or drinks)

I'll try to find the biscuits now...  

Ok, they're listed as well, described as McVities wheatmeal biscuits without chocolate and they're priced about $2.20 for 220gm...I found them in a place called Irish Express via MySimon...

The biscuits I still don't recongize, and the biscuits I'm thinking of, ones you put in the oven and bake, like a dinner roll or something, don't have chocolate in them. (scrunching eyebrows) LOL

No, we use ready made stuff for cheescake now days LOL like graham cracker crust.
Nope biscuits are biscuits, and cookies are cookies. LOL  Biscuits here are bread...and cookies are junk food, sugar induced food. LOL

Chocolate chip cookies, Oreo cookies, shortbread cookies, oatmeal cookies...etc...

I guess you would be getting at a pie crust kind of thing? Dough?  You can buy those ready packaged as well.....

Well here's one for cajun chicken. This is NOT a very hot recipe, so for those of you who don't like to burn your mouth, you'll love this. Just enough spice.  

Cajun Chicken Strips

1 tablespoon all-purpose flour
1 teaspoon poultry seasoning
3/4 teaspoon garlic salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
1-1/2 pounds of boneless skinless chicken breasts, cut into 1/2 inch strips
2 tablespoons butter or margarine

*Italian parsley and chili peppers, optional

In a large resealable plastic bag, combine the first six ingredients. Add chicken, half at a time, and shake to coat. In a large skillet, cook chicken in butter for 8-10 minutes or until the juices run clear. Garnish with parsley and peppers if desired.

Yield: 4-6 servings

**for the cayenne pepper, I couldn't find it, so I picked up cajun seasoning and substitued that instead. Comes out great!**
