SPAM QUICHE
(aka Spam Egg Pie for those real men who do not eat quiche)

       Yield: 4 servings
  
       1 c  Coarsely chopped mushrooms
       5 T  Butter/margarine
       1 c  Finely crushed stone wheat
            -crackers
     1/4 c  Green onions, sliced
     1/4 c  Brown onions, chopped
     3/4 c  Monterey Jack cheese
     3/4 c  Medium Sharp Cheddar cheese,
            -grated
     3/4 c  Mozzarella cheese, grated
       1 c  Ricotta cheese
       4 ea Eggs
     1/4 t  Cayenne pepper
     1/4 t  Paprika
     1/4 c  Milk
       1 ea Cooked artichoke
     1/4 c  Green bell pepper, chopped
     1/4 c  Red bell pepper, chopped
       1 cn Spam, shredded
  
Saute mushrooms in 3 Tbs butter until limp. Stir in the crushed crackers, then turn into well greased 10-inch round quiche pan. Press mushroom mixture evenly over bottom of dish and up the sides. Melt remaining butter, add onions, saute and add shredded Spam. Layer shredded cheeses and Spam in dish.
  
In blender, whirl the eggs, ricotta, milk and cayenne until smooth. Pour into
crust and sprinkle with paprika. Place sauteed red and green bell peppers on   top.

Bake in oven at 375 for 40 to 45 mins. Garnished with cooked artichoke.

Atta girl...cheese, artichokes, spices...all the good stuff!

Spam Spaghetti Carbonara

Ingredients:
1 1/2 lbs spaghetti
4 eggs, slightly beaten
12-oz can SPAM, cubed 1/4"
1/2 cups grated parmesan cheese
1/2 cup chopped onion
1/4 cup chopped fresh parsley
3 tbsp olive oil
ground pepper
3 tbsp butter

Directions:
Cook spaghetti according to package directions. Meanwhile, in skillet cook SPAM and onion in oil and butter over medium heat until lightly browned. Set aside. When spaghetti is cooked, drain; return to pot. Add egs; toss to combine. Add SPAM mixture, cheese and parsley; toss to combine. Season to taste with pepper. Serve immediately.

Thank you, Alison and ladies, but Spam needs no ingredients, no embellishing, no fancy dish names, and no artificial manipulation.

Would God be better if he wore fancy clothes or jewelry? No, He is God. Spam is Spam! It stands alone, proud, naked and inviting...who could ask for anything more?????????

And I recently learned that Spam is one of Hawaii's most popular items. I'll check that out in a few days.

Sunshine,

When I was in Oahu, Spam was on the menu at McDonald's.  Now that was some time ago, but still .... kinda like our McKinley Mac up here.

PS - I am not much of a spam fan but some Velveeta cheese (yah, I know it ain't cheese) and Pilot bread. Now there's a delicacy!

Hey Sunshiny One,

I am sorry that it has taken me so long to respond.

What is Pilot Bread?

Hmmm, it is a round, hard, large, thin biscuit that many people hate.  They just don't know what is good.  It is unsalted and is loved by commercial fishermen, Alaskan Natives and me!  It's great with Spam or Velveeta Cheese or Peanut Butter or just butter or plain in soup .. or .. the possibilities are endless.  They are even good plain (though the crumbs can choke - but a coughing fit is part of the Pilot Bread experience).

Love you almost as much as I love Pilot Bread,
