Is there a poem that is more ideal in terms of stanzas?  I have seen some poems, long in length, that are one long stanza and are, personally hard to follow.  I've been told that there is no rule against this.

There is no rule about the length of a poetic stanza.  If you are writing a specifically formatted type of verse, such as a sonnet, villanelle, or pantoum - there are specific criteria to meet.  Otherwise - your imagination is your sole limitation...
