Shoo Fly Pie Rhubarb pie has rhubarb And apple pie has apple There are no flies in shoo fly pie But scraps go into scrapple Then what is shoo fly pie, you ask? I can testify You haven’t eaten til you’ve tasted Sadie’s shoo fly pie The top is kind of crumby The crumbs stick til you eat it It’s cakey in the middle It’s not cake, but you can’t beat it Then there's that special layer Just below the middle If your from Alabama It really is a riddle Now here comes the important part If you come from St. Louie You must designate what kind you want The dry kind or the gooey If you come to Pennsylvania And you order shoo fly pie And you don’t say "dry" or "gooey" They’ll just look you in the eye Now when you get your shoo fly pie Please don’t use a fork They’ll think that you just stepped out Of a limo from New York Just pick it up with your hands It does make quite a mess But you’ll develope tactics And a smidgen of finesse Just hold it up above you Cause it always falls apart And let it drop into your mouth It’s really quite an art Then pick up all the fallen crumbs And eat them, here is why If you don’t, they’ll get offended And think you didn’t like the pie Shoo fly pie is filling It’s great with coffee in the morning But if you have come from San Jose Here’s a little warning Dry shoo fly pie is very dry That one you can dunk But if you dunk the gooey kind Your shoo fly pie is sunk Here in Pennsylvania No one cares just who you are The party of your politics Or model of your car But they'll ask you right up front If you’re from Kalamazoo Do you prefer your shoo fly dry Or with a little goo? Oh yes, please Liz, I want the recipe too, the gooey and the dry. I loved this poem, it was sooo good, brought a smile and made me hungry. Can I come to Pennsylvania and have some home made? |

The title (pie,dove and vine)made me think of apple pie,chicken and wine. Now after reading I also have to ask is there such a thing as "Shoo Fly Pie"? Weather there is or not, this is a very nice read Elizabeth. ![]() |

Important note: Traditional Pennsylvania Dutch Shoo-fly pie is made with molasses, but this means a lighter, sweeter sort than what can be found in most modern grocery stores. Unless you have a source for the old-fashioned stuff (I don't), you'll do best to sacrifice authenticity for the sake of flavor and substitute dark corn syrup (such as Karo). Wet-Bottom Shoo-Fly Pie 1 deep-dish ten-inch or 2 nine-inch pie crusts, unbaked. 1 cup flour 2/3 cup dark brown sugar 2 Tbsp. butter 1/2 tsp. salt 1 egg 1 cup molasses or dark corn syrup 3/4 cup boiling water 1/2 tsp. baking soda Preheat oven to 425' F. In a small bowl, crumb together the flour, dark brown sugar, butter and salt. Set aside. In a medium bowl, beat the egg and then gradually stir in the molasses or dark corn syrup until mixed well. In a measuring cup or small bowl, add the baking soda to the boiling water and stir to dissolve. Then add the water to the molasses mixture and stir until well mixed. Pour the liquid mixture into the pie crust(s). Distribute crumbs by hand, gently and evenly, on top of the liquid (crumbs will partly sink and partly float). Bake 10 minutes at 425, then reduce heat to 375 and bake another 35 minutes. This pie is best served at room temperature. |

Thank you PDV for posting the recipe for the wet bottom. I was just about to and I type soooo slow. But I will post the dry if I can find my mother's recipe. If you don't have molasses, you can use Turkey or King syrup or the dark corn syrup Thank you all for your responses to this silly poem. Imagine! asking if there's such a thing as shoo fly pie. I can't imagine a world without it. Which do I prefer? - the dry But then the gooey is great too Liz |

Ya know, Elizabeth, it is almost impossible to find a recipe for shoo fly pie in California! Once had a friend who told me it was his favorite, looked and looked for a recipe (in books, prior to the Internet), had no luck... This wonderful poem brought back memories, as it probably does for most people, except they have probably tried shoo fly pie!!! Thank you! Corinne |

This is one of the funniest I ever read, Liz It reminded my soo much on Grandmas famous Streusselkuchen. I like mine rather chewy You know that kind that is more than gooye rofl The ability to describe life with words is similar to painting a picture; both can be powerful tools. |
