Ham 'n' Eggs by ©Richard Budig 1999 Onion and garlic sizzlin' in a pan I'm dicin' ham just as fast as I can add enough curry to make it yellow and then I start on the portabello scrape away those dark brown gills makin' that mushroom nude for the grill drop in the ham and up goes the static bet you can hear it way up in the attic now give it a couple of them fancy flips like a guy on TV doin' the chef's two-step and here's where art and dexterity combine you gotta add a tot, just a tot, I say, of wine then give it one of them New York minutes so's to burn that alcohol down to the limit now crack in a couple of eggs from on high and give 'em a little time to poach and fry then stir gently with a big wooden spoon to be sure you don't bruise the mushroom and when the yellow swirls through the white and the ham peeks out all pink and bright put it on your plate beside your toast and jam and have a big sniff as you take fork in hand |
